The usual suspects in DDoS protection (rate-limiting, qos, randomly dropping sessions, etc) will also help VoIP, but against a carefully designed attack I have serious doubts about the voice quality. By all means, a product list could be interesting, but what I'd rather prefer is experiences from people who has recovered a VoIP service from an ongoing DoS attack (or failed in doing so), and what methods they used. Router configurations can be just as interesting as a fancy VoIP-branded security appliance...
As for specific products, how about a few traditional phone lines in reserve?
