Depending on the version of Avaya software being used, SIP may or may not be
employed.
Avaya for the longest time tunneled it's own DCS protocol via H.323, with no
security capability that I ever saw. Avaya does offer the ability to
encrypt all phone functions, however it imposes a significant penalty on the
number of phones supported in the environment.
I've seen a variety of guides on how to secure a VoIP network, but none of
them cover all points in detail (SIP in particular). I'm glad to see more
tools available to do this for SIP.

There are some testing tools for VoIP that you can utilize for example:
SiVus
SIPBOMBER
SIPP
sipsak
These tools are focus in SIP Based Signaling VoIP Services.
